I have the same issue as Per, e-mail notification do not seem to work regardless of whether I use mosmail or phpmail, notifications set to always, stop mail is off, etc. I feel certain that I have tried every combination of settings within uddeim and joomla.
Mail comes through fine from CB and Joomla itself, just no notifications from uddeim upon new message received.
I can find no log files or error logs. I do not know how to set watched variables as you describe above within the code.
Only other thing of note about my website is that it is on a subdomain (i.e. demo.domain.com)
Any suggestions would be greatly appreciated. Thank you!

Ok, please send me a superadmin login and I need extplorer component installed, so I can modify uddeIM scripts.
Please send the login credentials to ssl(at)gmx(dot)de.
uddeIM email notification works on thousands of sites, so it must be something different.
