RC2 language packs aren't fully compatible with the latest stable 1.0 release. Allthough you can use them there will be new translations added in the next days as far as I know.
Dutch translation is allready there and others will follow.

A quick question though. Will the language packs for RC2 work with the stable release or do I have to wait for an update on these?
Language packs need update.
Following languages are almost ready:
- Dutch: already downloadable
- Italian
- German Formal & Informal
- Bosnian
