When I enter my website registration page, it opens with the sunset cover image above, how and where do I change it?

You can change or disable the cover image for registration within CB > Configuration > Registration. Upload new images to the below location.

/components/com_comprofiler/plugin/templates/default/images/title

One last thing. How and where do I change the message appearing atop of the cover image in the registration page?

Same location you changed the image. It's the "Registration Header" parameter just below it.
