404 after Editing my profile was created by Se7eN
I am getting a 404 after updating my user profile (frontend)
My guess is I am redirecting to a non-existing page, but where can I see/select the URL to be used as landing page after editing a user profile?

Disable SEF, if enabled, and retry then check what URL you're on. You should see the Itemid in the URL, which you can match to its Joomla menu item and ensure that menu item has proper access (should be Public).
