It seems that what I need is the option to display these new fields on upgrade; even the merchandise plan type is treated as an upgrade if registered users try to buy it, so at present the fields are not displayed;

Users already registered will always be treated as "Upgrades". Upgrades is for existing users and new subscriptions is for registering users. For your user case I recommend a single-payment only subscription that is non-renewable and non-exclusive. This would give you the behavior of a merchandise plan, but the functionality of a subscription as they do not act one in the same.
