How do I change profile cb_country field from being a text field to a selection field with posting countries to select?

You can change a fields type by editing it within CB > Field Management. However, it being a text field likely means the values stored in the database by your users will never match whatever values you intend to use for the dropdown options.

Yes, you are quite right. Currently registered under 400 users, so it is an affordable task to correct. If I create a new country field as selection field, can I make this field with country selection from an imported country table?

Yes, you can do that using CB Query Field and its Query Select fieldtype, which populates the dropdown values from your own database query.
