Example shows you changing "Birthdate" to [username], but that doesn't change to the user's name

using fresh Joomla 4 with the latest CB build 2.6.2+build.2021.09.02.17.51.14.46caa5844

When creating a "Date" Field, you should be able to go to the parameters => "Display" => "Profile View Title", then, within the "Text" box, you should be able to type, "[username]'s age is". Upon saving this, you should now be able to see the user's name and his/her age...example "testuser's age is 21" on the users profile tab that you selected to use the date field in, in my example and the video example we chose to put this on the "Additional Information" tab. This does not work,

That parameter just lets you change the field title. If you want the field to display their age then select Age from the Profile View Display parameter.
