Trying to disable the ability of all users (including owners) from changing a groups name. Cannot find any setting to do this task. If there is no setting, is there any way I can disable it through the code?

There's no feature to do that. Name can always be changed by the owner of the category, the group, or CB Moderators. You would need to modify the core code of the plugin, which I can not help you with as we do not support core edits.

Hello Kyle,
Thanks for the explanations here. Me, too, I have a question:
Owner of all of my groups is Admin. But I do not want Admin to count as a member or for him to appear in the list of members. He is not actually a member, he is "only" the owner. None of the members can be owner.
In the frontend, I could hide Admin via CSS (although there is no suitable class), but the count would still be wrong ...

There's no option for that in GJ 2.7. I am currently rewriting GJ for GJ 3.0 release. I have already implemented a parameter in it to ignore owner when counting users and displaying the users tab.
