1. no settings available at this time, thanks for the feature request
you would have to change the CB code.
That's unless it's a real default value, in that case you can use phpMyAdmin and put something in the "default" column of comprofiler_fields.
2. Correct, in update profile, there is no settings at this time to hide displaying, like at registration.
You may need a plugin for achieving that.
