How can I suppress the age of the individual images from being displayed on my website?

You can't suppress the date display unless you override the template files and remove it from the HTML in both the container and modal usages. You can find CB Gallery template files below.
/components/com_comprofiler/plugin/user/plug_cbgallery/templates/default
Copy the default template folder, rename it as needed (e.g. my template), delete everything you don't intend on editing, then in CB Gallery select your template as the gallery template. This will avoid your changes being lost on upgrade, but could mean your template files become out of date.
