I'm trying to figure out how I can create a page that lists all members blog posts in date order. Not just a single member, but all members on the site, under one menu item. Is that possible?
My goal is to create a RSS feed for it also.

Best way to have both the features you're wanting is to set CB Blogs model to Joomla. This will store the blog entries to Joomla content component. So you'll be able to use normal Joomla content views for displaying blogs and any RSS features/extensions for Joomla content would also work for the blogs. Neither of the features you're wanting are available for the Internal model.
