The menu item My Profile is published and is visible in the User Menu, but no longer points to My Profile. It was working fine, but now a user must click on his name in the user list to be able to edit his profile. How do I reset this menu item when the parameters aren't configurable?

Just create a new component menu item, select Community Builder and publish the menu item.
