If you're using CBSubs and you've installed CBSubs Tax it should already include a country list you can utilize in a Query Select fieldtype or as part of Query Autocomplete on a Text field. Specifically the following tables are provided.
_comprofiler_countries
_comprofiler_provinces
Below is an example of how to use those tables with the Query Select field provided by CB Query Field.
