I would first upgrade from CB 1.9.1 to CB 2.0.7 and then from CBSubs 3.0 to CBSubs 4.0 RC (latest nightly).

Of course always take backups and when you upgrade to CB 2.0.7 please keep in mind that you also need to update any CB plugins you have installed according to this:

Then once everything is tested and appears to be fully functional you can focus on the Joomla 2.5 -> 3.4 migration. Many online resources about this and we also have this tutorial:
