is there an option to disable the "Send Mail" option on every profile?
or even better, allow each user to enable/disable this option as he wishes...

Have you tried the "Email Handling" drop down in the CB configuration?
Setting this to "Do not display email" will remove the email link that I think you are asking about.

Sorry for that, I found it already & u were right.
