If I was okay with a user changing their username, but not there First Name, Last Name, and email address (after registration)...is there a way to accomplish this? (If its not possible to change the username on the fly) Can I still prevent users from changing all of their other info?

For the things you don't want them to be able to change, change the parameters to "user read only".
