Hope this question isn't too silly but...how do I change the name that appears on the CB Profile Gallery tab? I'd like to change it to something like "Images and Files"

If you are running a multi-lingual site you need to change the various language files (found in the gallery plugin area).
If you are using only one language you can either change the default language file of the gallery plugin or just over-write the tab title in the CB Tab management area.
