I am building a site where my users are companies. How can I change the page title and the breadcrumbs to display the company name instead of the user name?

You could develop a new plugin that uses the trigger onAfterUserProfileDisplay to set a new page title. Otherwise you'll need to edit comprofiler.html.php. Sorry can not provide details as core edits are not supported. If you're wanting to just change the title at the top of users profiles simply edit the profile title tab and change the string (substitutions supported).
