1) backup site first (it's step 0 in readme...), so you can always restore it.
2) CB 1.2 RC 2 isn't that far from stable...we are using it live here, and lots of live sites use it with success. Check of course the known issues subforum before deciding.
3) large live sites usually have a test-clone to exercise the upgrades first
