Can I add content and images to a users profile, so that only the user can see what I have added on their profile. They should also not be able to amend the content I ad. And no one else shout be able to see their content. ?

Yes you can.
You need to use a combination of one or more CB fields placed on a tab that does not show on profile and is published for admin level and a delimiter field that only shows this field content to specific profile owner.
