Is there a way to add or remove columns on the User Management list? I have a user that all they do is add/update/delete users and all they really need to see is the name, username, email and one custom field.

No, not at this time. We'll provide column customization in a future release, but it's going to be similar to Joomla's and be mostly just visual so you won't be able to limit specific users to seeing specific columns but they'll be able to at least select only the columns they want to see.
