Thank you for your answer.
But I need 3 lists: one for PLZ, one for Name and one for Date.
I make this all searchabel, and then all fields come evertime. How can I do, that comes one searchfield at PLZ, one at Name and so on.
Is ist possible?

You can also see the Multi-Criteria Searches parameters available in the specific user list you want. There is a setting to only search for fields that are in the list.

The setting sets all fields that are displayed on the list to be searchable if configured to be searchable. If you do not want some of them to be searchable you need to edit those fields in Field Management and set them to not be searchable. If you want them displayed on that userlist, but not searchable you can use a delimiter field with a substitution such as [cb_myfield] on that userlist which will display the fields value for the user, but you won't see its search field.
