How do I add another payment type to the option list and, maybe, delete a few?

They're hardcoded so the only way to add more is to modify the below XML file.
components/com_comprofiler/plugin/user/plug_cbpaidsubscriptions/xml/edit.front.recordpayment.xml
You can add more options to the manual_payment_type type as needed, but your changes will be lost on upgrade.

I believe there's no Credit Card option as it expects those to not be handled manually. You could use "Online by other means", "Credit note", or maybe "Bank transfer" though to identify those payments.
