Hi,

I see that I can set Default pending Empty / Pending avatar using default CB template images.

Is there a way to choose a custom image without overriding the existing ones?

If I upload a new custom image into template folder, will it load into available list of images I can choose?

Yes, just upload new images to the /images/avatar folder of whatever CB template you're using. So for example the below is the path to CBs default template.

components/com_comprofiler/plugin/templates/default/images/avatar/

If I upload a new custom image into template folder, will it load into available list of images I can choose?

Yes.

I've uploaded a test image into default template and also in bootstrap template avatar folders but they are not loaded into dropdown list.

What's wrong?

They need to follow a clean naming convention. Review the existing images for examples. Not every format is supported as well. Use JPG, GIF, or PNG. You also need to reload the page so it can reparse the folder. I believe it's going to pick up the backend template though, which is a bug fixed for next release, so you'll need to add your images to the "luna" template.
