why administrator can't choose a default canvas in backend instead of the grey canvas?

You can set a Empty and Pending default for all image fields. Edit the image field (in this case the "canvas" field) within CB > Field Management then navigate to Parameters > Image Display and adjust "Empty Default" and "Pending Default" as needed.
