If I choose a password field, is that field shielded with ***** in the profile and encrypted in the database?

I don't think so. You should be able to do a test to verify.

Password fields, except core password field, do not have any encryption applied to their storage. Their display however is entirely masked. They'll display as ******** in profile view and won't display in profile edit (inputs are emptied).
