Tell me please, how in tab "CB Profile Update Logger" instead "Name of field" show "Title of field"?

You can't, the CB Profile Update Logger is primarily meant for administrative purposes so it logs raw data only. Since titles of fields are not unique, but names are it only displays the name. This will be improved in a later release where optionally field names can display as title and field values can be parsed for formatted otuput.

One more question, how in tab "CB Profile Update Logger" show changes for one field only?

You can exclude users, fields, and field types from logging within CB > Plugin Management > CB CB Profile Update Logger > Parameters > Logging.
