Is there a way to make members update profile before they can see the rest of the site after they login?

Yes, you'll need to create a plugin to check if all required fields have been filled in using CB events such as onAfterLogin. Please see tutorials in signature for trigger usage in a CB plugin.
You could also set first time login to redirect to profile edit within CB Configuration on the Registration tab or always redirect to profile edit via login redirect parameter in CB login module.
