Ok, I see the issue. I believe this is related to the WYSIWYG editor. For example click "Toggle Editor" and your changes will always save on first click. The way these editors work is you're not directly updating the textarea that's hidden. After an event (key up, blur, whatever) is triggered the editors jQuery fires and updates the textarea. In this case for some reason that's not happening properly.
I've added a bug ticket and will investigate further.

Ok, was able to fix the issue. The jQuery for the editor wasn't firing before the ajax form was serialized, which is why it took two saves. It now will properly fire before the form serializes so it'll always save with a single click. I've another ticket to take care of and will try to get a new release out today (if not today then tomorrow for sure).

It'll be CB Core Fields Ajax 2.0.1. You will need CB 2.0.4 though as I bumped its requirement.
