I don't know if this will work or not, but when setting your custom currency set the "source" to "CB" or maybe "CUSTOM" and see if that'll stop it from being overwritten by currency updates. Aside from that no there is no way to stop the auto updating.

You can't disable the auto updating. There is no feature to do so. If your host supports it you can try adding a firewall setting to block it I suppose. Aside from that I don't know what more to tell you, sorry. We do not support core edits so I can not help you edit CB core fields (only doable in CBSubs GPL at any rate).
