Where do you set when an expiration notification goes out to a member? Where can I find a log of those emails?

Expired subscription email is set in the CBSubs plan presentation tab.
CBSubs does not keep such a log.
Currently this email is sent when expiration takes place.
In next CBSubs 1.3 there will be a Mailer feature that you can schedule such emailings and also keep a log.
Current work-arounds available are AcyMailing newsletter (supports CBSubs) and a cron job script (posted in forums).
