Hi,

As with CB we send a lot of emails:
- connection notifications
- confirmed connection notification
- pms email notification

I was wondering if there was a way to monitor the email sendings and understand how many were sent/received, went to spam, open?

Nope - there is no way to know if something sent was marked as spam on the recipient side.
