Now that Video is support with the new CB Gallery...Is the video field being discontinued or is it just another way to show video?

No, the field isn't being discontinued. If anything it needs the improved code used in CB Gallery (I've a feature ticket to make this improvement). The field is just a field. The gallery is an entire, limitless, gallery of videos. Both fit different needs.
