I'm sure I must be overlooking something. I would like to have the members listed in a directory style manner with the option to skip to any letter in the alphabet.

CB Userlists don't provide this, sorry. CB Userlists allow you to search your users based off various search criteria (your fields). I recommend checking Joomla.org extension directory for some sort of extension which could provide this.
