question about this field type I need

I need a field where I can actually have 3 fields in one:

Name, Email, and a dropdown for "type"

We need to get names, emails, and type of user from our members. I'd like it to be able to add new lines via ajax so would look like this:

Name: __________, Emails: ___________, Type : --Please Select -- +

clicking the "+" would add a new line for another entry.

Is this possible via any of the addons or other tricks in CB?

There is no such usage in CB. Such a plugin is already on my very long TODO list. For now the best I can suggest is use CSS to position the fields side by side and make copies of your fields (so you've multiple sets of those fields) then show/hide them as needed using CB Conditional or custom jQuery.
