Hello,
I would like to know if it is possible to add custom fields when creating an article using CBBlogs.(Display method: Joomla)

Specifically, can I use Joomla Article Custom Fields, or  Can I add a custom CB field that would appear on the user’s profile tab and also be editable in the user’s profile management?

CB Blogs does not support custom fields. It's just a simple interface for creating blogs. If you need something more advanced I recommend setting up the proper permissions so users can just use Joomla's Submit Article menu endpoint to be able to submit proper articles.
