Does cancelling the CB Subs sub also cancel the connected Stripe sub?

Yes, cancelling the CBSubs subscription will also send an API request to cancel the recurring payments at Stripe. It's also possible to only cancel the recurring payments and continue to use the remaining time on the subscription.

And where does the cancellation happen? There isn't an apparent button for this. Is the Delete option in the user profile backend?
Client just changed the sub status to Invalid and it didn't change the Stripe sub.

Either on frontend using the unsubscribe button or in backend by editing the user and selecting the unsubscribe option for their subscription then saving them. Both will go through the appropriate API to cancel a subscription.

Client just changed the sub status to Invalid and it didn't change the Stripe sub.

Your client should not be directly modifying subscriptions.

Clients often do stuff they shouldn't do. Earlier this year one cleaned up his hosting account by removing the funny looking files. He 'had the right' to total access as he was the client and was paying the bills. Including my bill for restoring it.
