Still running 2.x. I will be updating to 3.x soon, but need to prepare the backups first (i.e. custom language files, etc).

I will manually fix this hiccup and look to updating to 3.x soon.

I was able to manually update the table with the correct expiry date and status (from X to A)

Which table do I also need to edit to correctly update the "invoice" description to reflect the correct time frame of the membership?

Invoice data is dynamic based off database data. So changing database values should update it to. You'll need to adjust the subscription, renewal, and expiration dates. All of those can be adjusted within CBSubs > Subscriptions and clicking the id under the ID column of the subscription you want to edit.

Oh wow , that is awesome. And here I was digging through the database using PhpMyAdmin when its right there under my nose. Even to this day, I'm still uncovering just how powerful CBSubs is. This is a nice surprise. Thanks.
