OK found the problem, no errors.
The field was in a tab with only edit rights for the special group, so I guess this was a pretty normal behavior

You can try disabling the edit display of the field, but I'm pretty sure it won't be ajax editable at that point. You could hide its field row using CSS if that doesn't work. We don't really have a usage case of editable, but not editable in profile edit.
